  Since we started our business, we have often received inquiries and requests from our customers for special steel knives such as ZDP-189, Cowry X.

  Hitachi ZDP-189 Powdered High Speed Tool steel (Carbon 3%, Chromium 20%)  is attractive, and very special, but still mysterious and rare on the market.

  When we saw the ZDP-189 steel knives for the first time, our first impression was they could rival or equal in excellence the Cowry X steel which Master Hattori uses for the KD Series Cowry X Damascus knives.

  We now have the chance to work with Sukenari forge-smiths to produce these ZDP-189 Forged Wa Gyuto knives and we are very glad to be able to introduce them to you.

  Sukenari is great forge-smiths who proactively take on new steels. We understand and respect their knife making policy as they are making every effort to satisfy professional usersf needs and demands.

  These ZDP-189 kitchen knives were made through a difficult and time-taking forging process and hand sharpening process. They are the result of many years of ZDP-189 knife production technology and of the rich experience Sukenari has devoted.

  Even if you are already satisfied with Japanese kitchen knives, you will still feel the colossal difference in sharpness that these knives bring. (HRC66 to 67)

  We bring you now the Wa Gyuto in three sizes: 210o, 240o,  of 270o. In the near future we also plan to offer the Petty, Santoku, Sujihiki and Kiritsuke.


  Each knife comes with matching Magnolia Wooden Saya and Octagon Shape Magnolia Wooden Handle.

      Mr. Masui , he is now 67 years old of experienced, innovative knife craftsman.

      He has over 45 years of knife making experience. However he is still very active and aggressively challenging to create something new and something different in designs and ideas.

      He is one of the rare craftsmen who can design own knife with own idea, and realize it all by himself.

      This time, Mr. Masui has decided to make High End Custom Line for SHIKI brand knives, which means he needs to devote all his energies, skills and times for producing these new Custom High End SHIKI Damascus Knives.

      For distinguishing from other SHIKI selections, Mr. Masui has paid more attention to select the best materials, and spent much more times for every making process and detailed hand working process.

      For the handle, Mr. Masui researched and managed to import and use much rare and unique wood material called gCalifornia Buck Eyeh from U.S.A.

      This wood makes beautiful natural texture with mixture of grayish and calm tan coloring. Each wood has a different and unique texture and coloring, giving you a feeling to own the special "one-of-a-kind" knife.

      The Stabilized California Buck Eye wood handle is nicely hand contoured for perfect balance and comfortable grip.  Gorgeous 3 Mosaic Pins are the elegant accent for the unique wood handle.


      Unique grey/silver coloring and mat finish of VG-10 Nickel Damascus Blade is also matching well with the California Buck Eye Handle.   As you may already know, there are several places in Japan known for fine knife making.

  One is our location, Seki City, the most famous knife-making city in Japan. Seki City has been producing a variety of cutlery including Japanese swords, kitchen knives, pocket knives, hunting knives and many others throughout its history. Among kitchen knives, Seki City is especially renowned for making professional quality Western Style knives such as Petty, Santoku, Gyuto and Sujihiki combining modern technology and craftsmenfs exquisite hand making skills and techniques. To give one example, the Hattori FH Series, JCK Original KAGAYAKI and Misono items are all from Seki City, and are among our highly recommended top quality Western Style Knives.


  Sakai City, Osaka is another famous place for making Japanese Traditional style knives such as Yanagiba, Usuba and Deba (single bevel edge knives). Each of these traditional knives is crafted through a hammer forging process and requires much of the craftsmenfs time and skill to make. We are especially impressed with their outstanding skill during the sharpening process (using a Water Wheel Whetstone). Japanese traditional style knives made in Sakai City are
the tool of choice of professional Sushi chefs who demand extra high cutting performance in preparing fresh Sashimi and Sushi.

  Our recommended products from Sakai City, Osaka are the Fu-Rin-Ka-Zan Hon Kasumi Series. Mizuno Tanrenjo

  Takefu City in Fukui Prefecture also has a long tradition of knife making and Takefu is famous for traditional hammer-forged knives called gEchizen Uchihamonoh.


  Takefu City is getting a lot of attention today for its knife making. The Takefu Knife Association is making a lot of effort to have been many passionate young forge-smiths coming to Takefu to master the craft of traditional forged knives.  

  These are our recommended knives from Takefu City: the Kagayaki Aogami Super Custom Damascus Wa Series, Mr. Itou  R-2 Custom Damascus Series, Takeshi Saji Unique Custom Knife Collections by Takeshi Saji who is popular forge-smith from Takefu city.

  Finally, Sanjo City in Niigata is also famous for its traditional hammer forging and knife making. The techniques and skills seen in the forging process are most highly recognized and the very talented special forge-smiths in Sanjo City have produced fine masterpieces of unattainable level. One example is the Tsukasa Hinoura Custom Knife Collection.

  Today we present these new traditional hammer forged knives from Sanjo City.

  The brand name of these new knives is Blue Moon (Œ= SEIGETSU).


  Repeated traditional hammer forging and fine hand sharpening combine to achieve the unique Japanese taste of the Tsuchime Black forged (Kurouchi) Blade. Blue Steel #2 core is sandwiched with soft stainless steel for easy maintenance.

 The unique Tsuchime dimples and dark color blade surface look like the Moon and its Craters. Each knife has a unique texture of Craters.


  To reflect the beauty of this Blue Steel #2 Japanese Carbon steel blade with unique Tsuchime Moon-like Texture, we named these these Japanese Traditional Forged knives gBlue Moonh.

   While introducing and selling our fine Japanese kitchen knives, we have received many requests for the fancy steak knives with Damascus blades. We have requested Mr. Masui (President of Hiro company (Maker of SHIKI)) who is one of the talented craftsmen who can design the knives and hand make the knives by all himself.    Now, finally, Mr. Masui came up with gorgeous set of 4 steak knives in Kiri wooden box.
  4 inches, VG-10 core forge layered Damascus stainless steel blade in mirror polish. There are two kinds of unique handle available.   As you know, the ZDP-189 is the highend powdered high speed tool steel as well as the Cowry-X, but unfortunately, it is getting very rare to use for knives in the market, due to the recent price increase, high minimum requirement and longer lead-time to get this steel.

  JCK has been introducing several ZDP-189 knives exclusively from Sanetsu, who is now a only maker working for ZDP-189 knives in Seki, but they have announced to discontinue the ZDP-189 knives after used up their current invetory of ZDP-189 steels. It's sad to hear of their decision,  but using the existing steels, we are pleased to introduce new addition of Gyuto 270mm. Beautifully mirror polished blade with elegant nickel and stainless Damascus design. Matching large Cocobolo wood and Black Linen Micarta handles are hand contoured for sure and comfortable grip with mosaic pins.

  Mizuno Tanrenjo is one of the respected Japanese Traditional style knife makers, located in Sakai City, Osaka where is a capital of Japanese Traditional style knives famous for "Hizukuri blades" (hot forging process).

  With a long time of knife making history and high level of craftsmanship&spirits,  Mizuno Tanrenjo has been producing fine Japanese Traditional style knives for over 140 years. Currently 3rd generation Mizuno Akiharu, 4th generation Mizuno Yasuyuki and 5th generation Mizuno Atsushi&Nanako are working together to keep the Mizuno`s traditions for next generation.

  Their products are being used and admired by many professionals and master chefs. But how can they define the good knives or not ?  Of course, the basic conditions of good knives should be sharp, longer edge retention and ease of resharpening etc, but the serious pro users seek something beyond that, and they feel and find it with Mizuno knives.

  Mizuno Tanrenjo especially concentrates to make practical knives, we mean for making real good made Japanese Traditional knives. It is difficult to feel them from the looks, but once you taste the Mizuno Japanese Traditional Style Knifefs cutting performance, you can understand why many of professional Chefs select Mizuno brand Japanese Traditional style knives and become their repeat users.

  Unfortunately it is getting more difficult to find a real good made Japanese Traditional style knife in today's market, but we believe Mizuno Tanrenjo will continue to remain as one of the best traditional makers for many more years to come.

 Finally, it is the time, and Master Mizuno finished a real masterpiece of Honyaki Wa Gyuto 240mm.

  Beautifully mirror polished Solid White Steel #2 (Honyaki Series) or Solid Blue Steel #2 (Honyaki DX Series) blade has Katana-like Hamon line. It features new blade profile of slightly thicker and larger dimension than Mizunofs other Wa Gyuto blades, and is nicely hand tapered down toward the cutting edge and the blade tip.

  One of our loyal customers, who was the first person to request this Mizuno Honyaki Wa Gyuto, and has been waiting it with us together for long time, is now the first proud owner of Mizuno Honyaki Wa Gyuto.   This is a special limited version  of 2 most essential kitchen knives, custom made by Mr. Hiro Masui, the maker of the gSHIKIh brand knives. It comes with Petty knife and French style Chef knife (narrow blade profile in-between Japanese Gyuto and Sujihiki is ideal for slicing).
 
  The high mirror polished blade is made of solid VG-10 steel hardened to HRc.60 and Hamaguri ground to 50/50 double bevel edge. The VG-10 is a proven Cobalt steel for durability, longer edge retention and rust resistance.

  Master Craftsman & Forgesmith, Takeshi Saji has been making traditional hammer forged knives for decades. His uniqueness is to add modern technologies, materials and designs, while keeping the traditional knie making methods. So far, JCK has introduced some of his unique Chef knives.

    In the beginning of this year 2014, we happened to find these very unique, interesting and distinctive knives from the knife maker in Sakai City, Osaka, a famous knife making city for Japanese Traditional Style Wa-bocho knives.

    We have been familiar with the Honyaki knives with beautiful Hamon Pattern. But it was very exciting and impressive to see the Honyaki knives which have art of drawing with the Hamon Pattern.

    The Forge-Smith of these unique Honyaki knives is called gGENKAIh, who is over 85 years old now and got retired already, but his name and his knives are still remained as one of best forge-smith and best knives in Sakai City. His knives have been rare and distinctive in the marketplace.

    We are well aware of the difficult process of Honyaki knives, especially with the Water Quenching Process (Mizu Yaki). The water quenching is the best method to maximize steelfs characteristics for better cutting performance. However, it requires special care and technique, as the blade often gets cracked during the quenching process.

    Additionally, you can imagine how it is more difficult to express the drawing of scene (moon and mountains) with the Hamon Patterns.  As you may know, the Hammon Patterns come from the Tsuchi-Oki process (putting clay on the blade before quenching process to adjust the heating temperature for different hardness on the blade)


    
These delicate differences in hardness create distinctive patterns when polished. However, it is extremely difficult to create desired Hamon patterns, that are invisible and no way to see it until the blade is finally finished. It can easily fail with improper temperature and quenching process, often resulting a blade warping and cracking. Because of this difficulty,  there are now only few forge-smiths who can produce these beautiful Honyaki knives in this generation. We really hope these special skills and techniques will be handed over to the next generation and we can continue to have chance to sell equally high performance, quality and beauty of fine Honayki knives in future.

    Fortunately, we could manage to receive 2Pcs of these Special Honyaki blades forged by GENKAI out of White Steel. We hope you will not miss the chance to obtain Japanfs special and distinctive Honyaki knives.

 "Honed Beauty" by Master Blacksmith, Tsukasa Hinoura



        We often heard a good rumor and reputation of the outstanding forge-smith, named "Tsukasa Hinoura" in Sanjo City, Niigata Prefecture, another Japan's cutlery producing district of traditional "Echigo" Forged Knives.

        Having our business based in Seki, we have a meeting frequently with major knifemakers in Seki to discuss a production schedule, new products and general matters. While talking with Mr. Hattori, he spoke very well of Mr. Hinoura's work. Since he is a knifemaster who never compromises and admires, I'm bit surprised to see that he has other knifemaker to admire and respect, but I understand only the top level craftsmen can respect each other and share the same feelings. We've heard same story from the knife expert and metallurgist, Mr. Onoue in Seki. He mentioned that Mr. Hinoura's knife is the best in the forged knives both in function and beauty. He has made metal analysis and testing of all kinds of knives, and proved that Mr. Hinoura's knife was in top ranking in every aspect. It can stand hard uses without warping and breaking.

        We are excited to hear these good things from both Seki knife specialists and are eager to introduce the Hinoura knives to our JCK customers as the high-end line.  At the Seki Knife Show in October, we had a chance to see his knives in hands and discuss about his backgrounds and his insistences on knife making. After a month, we finally got 4 knives we have selected at the show.

 
 

        Echigo Blacksmith, Tsukasa Hinoura is the third generation of Blacksmith family. He inherits his family's trade name "Ajigataya", but is also creating his original knives under his "Tsukasa" brand. He is aggressively searching his own way to express his skill and passion to the blades.

        Our first impression of his knives is the "Honed Beauty", and we can recognize his skills, times and passions behind it. It is the perfect knife with beautiful seamless line and form, no sharp corners, no distortion, no gaps etc. He devotes tremendous times from start to finish one knife for every detail.  Unlike some other forgesmiths, he never uses modern machineries and finished clad steels developed by the lastest technologies, because he believes the old fashioned traditional hand works of from forge cladding, Hizukuri forming to a water tempering  can only use his experienced skills and express his soul and passion into the blades.


        For the final finishing, he does a hand honing using the several different grids natural whetstones and spends at least two hours to polish and sharpen one blade. He says the whetstone hand honing is the best to get the sharpest edge of carbon steel blade. This is also very important work, not only to enhance total beauty of the blade apperance and function of the blade performance, but also to check the condition of the steel. He can judge to see if the steel has been treated properly by this stone polishing.   It is the essence that these time-consuming and never-compromising processes make his knives super-outstanding among many forged knives in Japan. When you hold his knife, you will see what we mean, a perfect fusion of the forged carbon steel with clad soft iron on the polished edge line with mysterious sparkling that shows a functional beauty c.

        His basic blade pattern is called gKitae-Jih (bn), using Shirogami No.2 Carbon Hagane steel core wrapped and layer-forged with wrought irons, and is available in polished finish and blackened finish. To start with, we have selected two new evolved patterns in blackened finish. These new distinct Damascus patterns are from his forging technique to give you a visual joy as well as the highest level of craftsmanship.

2)   Kitae-Ji (bn)

        Last weekend, we had the pleasure of meeting again with the Echigo Master Forge-Smith, Tsukasa Hinoura and reviewing his masterpieces at the Seki Knife show. All of his knives are truly beautiful and work of art. Now, we have decided to add his basic blade pattern, "Kitae-Ji (bn)" series, because this is all about his original works and creations that made him famous as the high-end forge-Smith.

       Nowadays, we can find many industrial made clad and Damascus steels that became available by modern technologies, but Mr. Hinoura sticks to the old fashioned way based on the traditional Wa-Kaji technique (Japanese traditional Blacksmithing technique). It requires tremendous times of hand working to finish one knife from forge
welding and Hizukuri to water hardening and hand honing. He believes this is the only way he can devote all his experienced skills, passion and soul to discriminate from the conventional knives, and his masterpiece knife tells it all.

      He uses Shirogami No.2 for core edge, which is a high carbon steel from Hitachi. His delicate hot hammering process and technique makes it more durable and strength without sacrificing the carbon component. It is then
forge welded and wrapped with layered wrought irons, and forge shaped by Hizukuri. You will see a thick and sturdy blade tang gradually tapered toward blade edge and tip, that is a special feature of the Hizukuri shaping
process. Also, the forge welding (Tan-Setsu) process requires high level of Kaji technique to show a beautiful seamless fusion of Hagane and wrought irons when the blade is finished. He then uses traditional water quenching process backed by his experience and intuition to achieve it's highest cutting performance. For polishing and final finish, he does a time consuming hand polishing and honing with whetstones. He spends at least two hours to polish and sharpen one blade from the rough grit stone to finer grit stones. The final honing is done with natural stone. He believes the hand stone honing can get the sharpest edge for carbon blade, and also it brings out the characteristic of irons and gives you a honed beauty.
