     SG-II Nickel Damascus Wa Gyuto

                                       by JCK

JCK Originalfs new products Fu-Rin-Ka-Zan ZDP-189 Clad Wa Series (released in November 2015) are having great reputation and they are very hot knives now. Many users are impressed and happy with the cutting performance and edge retention of the ZDP-189 Special Steel knives.

SG-II is also reputable great Powdered High Speed Tool Steel from Takefu steel company (Carbon 1.25 to 1.45 %, Chromium 14 to 16%, Molybdenum 2.3 to 3.3 %, Vanadium 1.8 to 2.2 %)

This time, we have requested Sukenari to make beautiful Damascus blade version of SG-II steel of special Wa Gyuto knives.  Below are the main reasons why we have chosen SG-II Steel for our new Damascus knives.

SG-II steel blade does not have such ultra-high-hardness as the ZDP-189 steel blade(HRC66 to 67), but it still has great high-hardness HRC63 to 64, you can enjoy and taste outstanding cutting performance and edge retention. Also it is easier to re-sharpen SG-II blade than ZDP-189 blade.

Sukenarifs great experienced and fine traditional hammer forging process brought the result of beautiful Wavy Damascus layers pattern and extra high-cutting performance and edge retention.

Beautifully Mirror Polishing process makes fine impact of Wavy White color Damascus layer blade.

            ZDP-189 Wa Series

                                       by JCK

Since we started our business, we have often received inquiries and requests from our customers for special steel knives such as ZDP-189, Cowry X.

Hitachi ZDP-189 Powdered High Speed Tool steel (Carbon 3%, Chromium 20%)  is attractive, and very special, but still mysterious and rare on the market.

When we saw the ZDP-189 steel knives for the first time, our first impression was they could rival or equal in excellence the Cowry X steel which Master Hattori uses for the KD Series Cowry X Damascus knives.

We now have the chance to work with Sukenari forge-smiths to produce these ZDP-189 Forged Wa Gyuto knives and we are very glad to be able to introduce them to you.

Sukenari is great forge-smiths who proactively take on new steels. We understand and respect their knife making policy as they are making every effort to satisfy professional usersf needs and demands.

These ZDP-189 kitchen knives were made through a difficult and time-taking forging process and hand sharpening process. They are the result of many years of ZDP-189 knife production technology and of the rich experience Sukenari has devoted.

Even if you are already satisfied with Japanese kitchen knives, you will still feel the colossal difference in sharpness that these knives bring. (HRC66 to 67)

We bring you now the Wa Gyuto in three sizes: 210o, 240o,  of 270o. In the near future we also plan to offer the Petty, Santoku, Sujihiki and Kiritsuke.

Each knife comes with matching Magnolia Wooden Saya and Octagon Shape Magnolia Wooden Handle.

SHIKI High End Custom Damascus Series

Mr. Masui , he is now 67 years old of experienced, innovative knife craftsman.

He has over 45 years of knife making experience. However he is still very active and aggressively challenging to create something new and something different in designs and ideas.

He is one of the rare craftsmen who can design own knife with own idea, and realize it all by himself.

This time, Mr. Masui has decided to make High End Custom Line for SHIKI brand knives, which means he needs to devote all his energies, skills and times for producing these new Custom High End SHIKI Damascus Knives.

For distinguishing from other SHIKI selections, Mr. Masui has paid more attention to select the best materials, and spent much more times for every making process and detailed hand working process.

For the handle, Mr. Masui researched and managed to import and use much rare and unique wood material called gCalifornia Buck Eyeh from U.S.A.

This wood makes beautiful natural texture with mixture of grayish and calm tan coloring. Each wood has a different and unique texture and coloring, giving you a feeling to own the special "one-of-a-kind" knife.

The Stabilized California Buck Eye wood handle is nicely hand contoured for perfect balance and comfortable grip.  Gorgeous 3 Mosaic Pins are the elegant accent for the unique wood handle.

Unique grey/silver coloring and mat finish of VG-10 Nickel Damascus Blade is also matching well with the California Buck Eye Handle. Mr. Masui has struggled and finally achieved this unique mat finishes Damascus blade. He has tried several acid etching times and processes to test and find the best appearance of the Damascus layered textures on the decent unevenness blade surface. He has then added lightly blasted finish and shinny nickel layers. I'm sure you will love this outstanding Damascus blade finish

Mr. Masui did not forget to pay his special attention to the bolster too, and added extra process to make it matching matt finish and calm silver color for total beauty.

For every part and details, Mr. Masui did not make any compromise and we are proud to introduce these SHIKI High End Custom Damascus Series knives for those who seek a pleasure of owning and using in addition to the functions.

Each blade has hand chisel engraving logo in Kanji meaning gSHIKI  Hiroaki madeh.

Each item is being available now in limited quantity.  This is the Top of the SHKI line of Custom High End Damascus knives.

Master Saito New Cutom Knife Collections

At the Seki Outdoor Knife Show in October 2014, I fell in love with this unusual handmade knife. When I picked it up and had a closer look, I saw that every little detail had been carefully taken care of, it had perfect grip and balance, and overall it was the fruit of its creator's spirit and philosophy. Hiroshi Saito, the maker of this knife, has been dedicating long years to creating custom knives. The manufacturing process of custom knives is very different from that of factory knives, which follows many standardized automatic steps. Making custom knives requires effort, and the value of the final product lies in how the product reflects the creator's philosophy and skill to perfection.

The blade's so-called hairline finish is the product of a highly difficult process that gives the knife a unique texture and presence. The blade is made from premium Japanese VG-10 stainless steel.

The slightly rounded curved ironwood handle and stainless bolster are designed to match the unique Up-Swept blade shape and to fit the so-called 'pinch grip', the way many numbers of users hold a knife. Designed to be easy to grip, this beautiful wood grain ironwood handle is hand contoured and finished for universal use.

We bring you a limited offer of two sizes: one compact Utility knife (160 mm blade) and the other, a Gyuto with a 185 mm blade, Gyuto 240mm.

For all those who love cooking, from professional chefs to people cooking at home, if you are looking for slightly different, high quality handmade knives, these Saito knives are IT!

"Honed Beauty" by Master Blacksmith, Tsukasa Hinoura

We often heard a good rumor and reputation of the outstanding forge-smith, named "Tsukasa Hinoura" in Sanjo City, Niigata Prefecture, another Japan's cutlery producing district of traditional "Echigo" Forged Knives.

Having our business based in Seki, we have a meeting frequently with major knifemakers in Seki to discuss a production schedule, new products and general matters. While talking with Mr. Hattori, he spoke very well of Mr. Hinoura's work. Since he is a knifemaster who never compromises and admires, I'm bit surprised to see that he has other knifemaker to admire and respect, but I understand only the top level craftsmen can respect each other and share the same feelings. We've heard same story from the knife expert and metallurgist, Mr. Onoue in Seki. He mentioned that Mr. Hinoura's knife is the best in the forged knives both in function and beauty. He has made metal analysis and testing of all kinds of knives, and proved that Mr. Hinoura's knife was in top ranking in every aspect. It can stand hard uses without warping and breaking.

We are excited to hear these good things from both Seki knife specialists and are eager to introduce the Hinoura knives to our JCK customers as the high-end line.  At the Seki Knife Show in October, we had a chance to see his knives in hands and discuss about his backgrounds and his insistences on knife making. After a month, we finally got 4 knives we have selected at the show.

Echigo Blacksmith, Tsukasa Hinoura is the third generation of Blacksmith family. He inherits his family's trade name "Ajigataya", but is also creating his original knives under his "Tsukasa" brand. He is aggressively searching his own way to express his skill and passion to the blades.

Our first impression of his knives is the "Honed Beauty", and we can recognize his skills, times and passions behind it. It is the perfect knife with beautiful seamless line and form, no sharp corners, no distortion, no gaps etc. He devotes tremendous times from start to finish one knife for every detail.  Unlike some other forgesmiths, he never uses modern machineries and finished clad steels developed by the lastest technologies, because he believes the old fashioned traditional hand works of from forge cladding, Hizukuri forming to a water tempering  can only use his experienced skills and express his soul and passion into the blades.

For the final finishing, he does a hand honing using the several different grids natural whetstones and spends at least two hours to polish and sharpen one blade. He says the whetstone hand honing is the best to get the sharpest edge of carbon steel blade. This is also very important work, not only to enhance total beauty of the blade apperance and function of the blade performance, but also to check the condition of the steel. He can judge to see if the steel has been treated properly by this stone polishing.   It is the essence that these time-consuming and never-compromising processes make his knives super-outstanding among many forged knives in Japan. When you hold his knife, you will see what we mean, a perfect fusion of the forged carbon steel with clad soft iron on the polished edge line with mysterious sparkling that shows a functional beauty c.

His basic blade pattern is called gKitae-Jih (bn), using Shirogami No.2 Carbon Hagane steel core wrapped and layer-forged with wrought irons, and is available in polished finish and blackened finish. To start with, we have selected two new evolved patterns in blackened finish. These new distinct Damascus patterns are from his forging technique to give you a visual joy as well as the highest level of craftsmanship.

1)   Unryu-Mon (_) clouds flow patterns

Based on the gKitae-Jih pattern, the layers have been twist forged repeatedly, creating unique clouds flow Damascus patterns on entire blade surface including the spine

2)   Kitae-Ji (bn)

Last weekend, we had the pleasure of meeting again with the Echigo Master Forge-Smith, Tsukasa Hinoura and reviewing his masterpieces at the Seki Knife show. All of his knives are truly beautiful and work of art. Now, we have decided to add his basic blade pattern, "Kitae-Ji (bn)" series, because this is all about his original works and creations that made him famous as the high-end forge-Smith.

Nowadays, we can find many industrial made clad and Damascus steels that became available by modern technologies, but Mr. Hinoura sticks to the old fashioned way based on the traditional Wa-Kaji technique (Japanese traditional Blacksmithing technique). It requires tremendous times of hand working to finish one knife from forge
welding and Hizukuri to water hardening and hand honing. He believes this is the only way he can devote all his experienced skills, passion and soul to discriminate from the conventional knives, and his masterpiece knife tells it all.

He uses Shirogami No.2 for core edge, which is a high carbon steel from Hitachi. His delicate hot hammering process and technique makes it more durable and strength without sacrificing the carbon component. It is then
forge welded and wrapped with layered wrought irons, and forge shaped by Hizukuri. You will see a thick and sturdy blade tang gradually tapered toward blade edge and tip, that is a special feature of the Hizukuri shaping
process. Also, the forge welding (Tan-Setsu) process requires high level of Kaji technique to show a beautiful seamless fusion of Hagane and wrought irons when the blade is finished. He then uses traditional water quenching process backed by his experience and intuition to achieve it's highest cutting performance. For polishing and final finish, he does a time consuming hand polishing and honing with whetstones. He spends at least two hours to polish and sharpen one blade from the rough grit stone to finer grit stones. The final honing is done with natural stone. He believes the hand stone honing can get the sharpest edge for carbon blade, and also it brings out the characteristic of irons and gives you a honed beauty.

UP!     Master Nagao Final Collection
    VG-10 Nickel Damascus Gyuto 210mm

After Master Nagao retired last year due to his old age and lack of successors, we have received many messages from his fans expressing regret at the news and messages recognizing his achievements and praising the high quality of his kitchen knives.

We were also shocked to hear the news about Master Nagao's retirement, but we know that his passion and craftsmanship will continue to live in his knives and will never be forgotten.

His strong devotion to creating the perfect sharpness and to researching the best way to achieve it made a very strong impression on anyone who knew him.

Tenmi Jyuraku Aogami Super was his steel kitchen knife masterpiece fully embodying his vision. The Tenmi Jyuraku Damascus series was a series of great Damascus knives combining style and sharpness, characteristic of Nagao's unique works.

Towards the end of his long career, Master Nagao created the VG-10 nickel Damascus Gyuto 210
o.

He managed to create a Damascus pattern like never seen before by incorporating his entire forging skill acquired throughout the years. The pattern of gentle waves beginning at the top of the blade turns into a more irregular and detailed Damascus pattern close to the edge. Knives with such an unusual Damascus design are rare, as this is an original pattern created in Master Nagao's unique forging process.

Gyuto 210o, the most popular tool with both home cooks and professional chefs is now ready.

Perfect for the end of the Nagao knife collection, these knives are beautiful and filled with his unique ideas. This last work vibrates with Master Nagao's unending search for the perfect sharpness. We hope you pay them the respect they deserve as the last pieces of the Nagao collection, and we hope you continue to enjoy using them for many years to come.

Master Nagao is currently 80 years old. He is still completely dedicated to knife making and continues to work at the factory every day. Regarding the future of Japanese knives, he believes that he needs to pass on the know-how of good knife-making to the future creators and craftsmen and continues to work towards this goal.@

Here and now we would like to express out gratitude for Master Nagao's great work and to convey our respect for all the kitchen knives born out of his hands. We hope that you continue to cherish them as very special knives.

Since we have started introducing and selling Hattori Forums FH Series knives in year 2007, its quality, performance and craftsmanship of Hattori FH knives have been well recognized among professional and serious home chefs.

We have always recommended Hattori FH High-End Chefs knives as one of the best quality, great stainless steel kitchen knives to the professional chefs with confidence.

When it comes to the total quality and performance knives, we always feel some strong confidences with Hattori knives for his uncompromised attitude to make superior quality knives than others.

As you know, there are so many processing steps to finish one knife such as grinding, heat-treating, polishing etc etc. Each process is very important, and any neglects affect to the final quality and  performance.  It is indeed difficult to see and judge the good knives from the outside looks. However, since our company started working with Hattori in 1980fs, we have been seeing Hattorifs works and policy to prove it.

Nowadays, there are many cheap and low quality knives in the market.  It was not the easy thing to keep and continue his own and original way of the making process for long time. But we believe Hattorifs craftsmanship and spirits have been very active, therefore Hattorifs quality knives are well-known in world market in this generation.

Hattori FH Series knives have following handle selections already.

Linen Micarta Handle (great durability, non-shrinkage, perfect grip of most practical handle version)

Cocobolo Wood Handle (beautiful natural wood texture, light coloring of natural wood handle version)

Ebony Wood Handle (Elegant and simple texture of Natural wood handle version)

Now it will be a first time to add the very fresh White&Light Coloring of handle version for Hattori FH Series.

DuPont Corian is the special material which is invented and produced for high-end, luxury kitchen, kitchen counters and tables, etc. They are equally beautiful to Natural Marble Stone, yet have great durability, non-shrinkage and sanitary.

Mr. Hattori already recognized DuPont Corian can be practical and unique material for knifefs handle from long time ago. Some of Hattori hunting knife items have DuPont Corian Handle materials too.

We have selected simple white color main and elegant& natural Marble stone texture, we believe this new handle matches well with your stylish kitchen and it will be great addition to your special knife set for the existing owners of Hattori FH knives too.
