Echizen-City (formerly Takefu), Fukui Prefecture is famous for the Echizen Uchihamono (Hammer forged knives) backed by the traditional Hizukuri forging technique with 700 years of history. It dates back to 1337, when the Swordsmith, Kuniyasu Chiyozuru has moved to Fuchu (Takefu) from Kyoto and propagated his high techniques of the swordmaking to the local  blacksmiths and began producing sickles and other agricultural blades for farmers, in addition to swords.

  Ryusen Company is a leading manufacturer in Echizen-city for professional quality Chef’s knives, inheriting the ancient forging technique combined with modern technology. They produce a full line of Kitchen knives with their own brands as well as O.E.M. For instance, our best selling HD series of Damascus kitchen knives were the result of Ryusen’s collaborative work with Hattori.
