style Cheffs knives. The blade is made
of Pure Japanese carbon steel to provide extremely
high hardness, sharp edge and edge retention. The full tang
construction Black Pakkawood handle with solid stainless
steel bolster. Carbon steel blades requires additional
care for avoiding rust problem, but can be recommended
for the serious users who
demands sharpness and longer edge retention at
professional kitchen.
Notice: Due to a
difficulty to obtain Natural Ebonywood material, Masamoto
decided to change the handle material to Black Pakkawood.
Current models come with Black Pakkawood handle and we will
change pictures of HC items in near future.
