Misono produces 440 Series knives to comply with serious demands by professional users as the working knives.  Professinal's demands are high level of quality control,  rust resistance, cutting performance and easier to resharpen (easier to make sharp edge in the sharpening process). There are so many kinds of kitchen knives available in todays market, but it is difficult to find the knife which exactly fits well for those demands.  Misono carefully listened to these pro users' demands and gained their reputations on this 440 series of high quality and basic design kitchen knives.

Misono uses new material of "High 16 Chromium and Molubdenum Stainless steel" which is superior to standard Molybdenum Stainless steel for durability, rust-resistance and easy resharpening.  The main secret of these excellent performances is from Misono's state-of-art manufacturing  processes. In fact, we heard that Misono does some extra special steps and treatments, which are strictly confidential to outside. We believe this is the something special to outperform other normal knives. After all, the good steel material means nothing, unless it is properly treated to bring out it's utmost chracters.

In talking with professional chefs,  I often hear their favorite knives are Misono 440 Series knives even though they have long time experience working as pro chefs and used many kinds of knives before.  It's because of the overall excellent performances....A Real Pro's Choice.
